You wipe the counter grease rag in hand Coffee steams dark in a chipped porcelain land The regulars joke same punchline each night You grin wide serve eggs over easy light But out on the platform tiles cold and gray A hound traces edges where commuters stray No collar no tags just muscle and bone King of the tunnels claims it his own Third shift hound ears cocked to the rail Sniffing the ghosts of the last southbound trail Paws click rhythm on yellow painted line Midnight's own cook in a kitchen divine You flip a burger spatula sings Steam rises up like subway train wings The waitress pours refills calls you Hon Shift drags slow till the morning sun Down on the platform nose tests the air Tuna wrap wrapper half-eaten pear Tracks hum low in the hound's chest deep Promises only the underground keep Third shift hound ears cocked to the rail Sniffing the ghosts of the last southbound trail Paws click rhythm on yellow painted line Midnight's own cook in a kitchen divine Fluorescent flickers above booth three Old man reads paper shakes head at me You crack a yolk golden sun in the pan Another night done the best that you can Train brakes screech the hound don't flinch Knows the schedule down to the inch You know the orders who takes hash browns Both of you wear invisible crowns Third shift hound ears cocked to the rail Sniffing the ghosts of the last southbound trail Paws click rhythm on yellow painted line Midnight's own cook in a kitchen divine Five AM comes the platform fills Hound slips away past turnstile grilles You lock the grill wipe the final stain Same quiet nod to the morning train Third shift hound ears cocked to the rail Sniffing the ghosts of the last southbound trail Paws click rhythm on yellow painted line Midnight's own cook in a kitchen divine Yellow line fades apron comes off Two night workers heading home soft
