I know these streets like the lines on my palm Every pothole every midnight calm Meter's off but the engine runs clean Best damn taxi this town's ever seen [Pre- But tonight the fare flag's different somehow Flour dust on his coat sweat on his brow He don't want the station he don't want the bar He points to the yard where the boxcars are He kneads the dark where the iron rails meet Dough rises slow in the midnight heat Fog swallows whistle swallows steam Flour on steel that's the baker's dream He carries a peel wrapped in canvas sack Seeks the warm spot where the brakes held slack Switchman yells but the baker don't flinch Knows the rhythm of the yard by inch [Pre- But tonight the fare flag's different somehow Flour dust on his coat sweat on his brow He don't want the station he don't want the bar He points to the yard where the boxcars are He kneads the dark where the iron rails meet Dough rises slow in the midnight heat Fog swallows whistle swallows steam Flour on steel that's the baker's dream Oven's cold but the boxcar's warm Shielded from wind shielded from storm He slaps the loaf on the metal floor Hears the crust sing hears the locomotive roar My passenger pays in loaf and crust Leaves me a heel earns my driver's trust Two night birds working while the city sleeps One drives the streets one bakes the deeps He kneads the dark where the iron rails meet Dough rises slow in the midnight heat Fog swallows whistle swallows steam Flour on steel that's the baker's dream Dawn cracks pink on the signal tower Baker wipes hands checks the rising hour Loaves cooling on a coupling pin Best breakfast smell this town's been in He kneads the dark where the iron rails meet Dough rises slow in the midnight heat Fog swallows whistle swallows steam Flour on steel that's the baker's dream Flour on steel rising in the gleam Flour on steel in the morning beam Meter clicks off as the sun climbs high Another night fare another goodbye
